Our highest-scoring wine to date has a pure blackcurrant varietal flavour with hints of eucalyptus and menthol. Ripe and fruit-forward with impressive tannic structure and fresh acidity, this Cabernet is built to last – but can be easily (and readily!) drunk now. Grown organically by master-of-his-craft Jeff Coutelou in the Languedoc and expertly made into wine in London, with ageing in both new and old oak barrels. Try it with strong and salty extra-mature cheddar and some crusty bread.

A few years ago, Languedoc winemaker and grower Jeff Coutelou decided he would only make wine from indigenous southern French varieties, despite having a beautiful vineyard of Cabernet Sauvignon that was planted by his father. Rather than rip the vines out, Jeff sold the fruit to us, allowing us to make this wonderful Cabernet Sauvignon. Of all the grapes processed in 2014, the Cabernet was the only parcel to be crushed, due to the small berry size and thick skins. After fermentation 25% of the wine was aged in new oak barrels, with the remainder stored in older barrels with a more subtle flavour. After seven months the wine was removed from its lees and returned to barrel for a final three months.
