Giovanni Cordero and his three sons run a family business growing organic Barbera, Nebbiolo and Dolcetto just outside of Priocca, as well as raising cattle for home-cured salami. The grapes for this wine come from a south-facing vineyard, which allows them to soak up plenty of sun. In the winery, the grapes were gently hand-sorted then cold-soaked for two days prior to fermentation, to extract tannin and colour. Aged in a mixture of stainless steel for freshness, and oak for texture and complexity.
