Our 2025 Pinot Noir Rosé is the inaugural release in our Cool Hand Estate Range, crafted exclusively from our Foxhole Vineyard in West Sussex. Planted in 2008, these are the oldest and most established Pinot Noir vines on our estate. Naturally low-yielding, they produce just three tonnes per hectare, concentrating flavour and character in every single bunch.

We’ve always had a soft spot for this specific block and wanted to create a wine that captures both its unique personality and its premium potential. The result is a beautifully textured, expressive rosé that’s as enjoyable on a sunny afternoon as it is at the dining table. Bright, vibrant fruit is balanced by a subtle structural complexity, making this a wine that is effortlessly drinkable yet deeply reflective of its origin.

Tasting Notes

  • Nose: Delicate and expressive, opening with aromas of rhubarb compote, fresh raspberry, and rose petals. Notes of strawberry lemonade add a bright, inviting citrus lift.

  • Palate: Dry, vibrant, and beautifully balanced. Fresh flavours of strawberry and juicy raspberry are met with a crisp citrus freshness, while gentle time on lees adds a soft, creamy texture.

  • Finish: Clean, elegant, and refreshing, with lingering red berry fruit and a distinct saline mineral finish.

Food Pairing

A versatile rosé that pairs beautifully with fresh, seasonal dishes, including:

  • Charcuterie and soft cheeses

  • Grilled prawns or seared tuna

  • Salmon nigiri with a touch of wasabi

  • Summer berry desserts and fresh strawberries

Winemaking

  • Harvest: Hand-harvested from our Foxhole Vineyard, West Sussex.

  • Pressing: Macerated for 3 hours, followed by whole-bunch pressing at our Fulham winery.

  • Fermentation: Cool fermentation at 12–14°C in stainless steel, followed by partial malolactic fermentation.

  • Aging: 6 months on fine lees before bottling.
