A sharp departure from the fruit-forward style of PétNat in 2020, 2021 is super mineral, lemon sorbet, pear drops with a complex flinty nose.
The grapes were all hand harvested, whole bunch pressed in Fulham, fermented in our Egg. Fermentation was completed in bottle under crown cap which traps the natural fizz (around 2.8bar).
The yeast are still inside the bottle so this wine will be cloudy and continue to evolve as it ages.
Serve icy cold (to subdue the fizz on the initial pop).
Vineyard: This is a blend of three grapes from three different vineyards West Marden, SE Vineyard, Mersea Island

75% Reichensteiner, 15% Bacchus, 10% Pinot Gris. fruit from Mersey Island in Essex.
Slightly cloudy. Salted lemons, sea shells, samphire and oysters. Tastes like the sea on a sunny, wind-tossed spring afternoon. So salty and savoury and gleefully offbeat. So much here – rimpling flavours of pomelo-pith bitterness, chicory leaf, borage flower, wet sand. Love this.
